The age of the vines is an important factor in the quality of the great Médoc Wines. Cos's vineyard has an average age of 35 years.
The French legislation takes account of this and reserves the Saint-Estèphe Appellation d'Origine Contrôlée for wines produced from vines over three years.
The prestigious Cos d'Estournel wine is produced from vines of between 20 and 60 years and over. A selection of vines between 10 and 20 years produces the second wine: Les Pagodes de Cos.
The wines produced from younger vines on Cos's Estate which are worthy of the Saint-Estèphe appellation are generally sold in bulk to the merchants who market them under their own label.
But for certain vintages, the quality of these wines is such that they merit being château bottled under the REYBIER Domaines label "A l'éléphant".
This Saint-Estèphe wine from Cos is vinified with the same care as its two elders: Les Pagodes de Cos and Cos d'Estournel. It is aged in barrels in the same cellars for a period of twelve months.
